ALEPPO PEPPER, also known as Pul Biber, Halaby pepper or Turkish red pepper flakes, is a semi-dried and coarsely ground dark red pepper grown in Syria and Turkey. ALEPPO PEPPERS are moderately hot red chilies from Turkey and Northern Syria, sun-dried, seeded and crushed. Also known as Halaby pepper, Aleppo pepper, is the preferred capsicum for adding the gentle edge of authentic Mediterranean flavor and fragrance.

TOP USES OF ALEPPO PEPPER: It gives a bright red touch of colour, but it does have kick, so sprinkle with circumspection over soups (especially red lentil soup), bland, soft, cheeses, pizza, salad, mix with diced preserved lemons and olive oil, and cover a chicken with the mix before roasting, in a vinaigrette, sprinkle over fried eggs for a Turkish breakfast or in Turkish meatballs – köfte, mix into a potato salad, rub into meat before grilling.

Aleppo peppers start out looking like something between a pretty big bell pepper and a poblano. Farmers harvest them when they're orange-red or darker red. In order to get really nice flavor out of them, they dry them out in the sun during the day. But instead of just letting them dry completely in the sun like you would see with guajillo chiles or the more Mexican-style chiles, farmers will cover them at night with fabric or even sometimes put them in bags. That allows them to preserve some of the natural oils from the skin of the pepper. That technique is called 'sweating' because the peppers stay moist under the covering. So they do dry but not entirely. When you do see ground Aleppo pepper, it always has that oiliness and an almost damp texture. So it's not just about the sensation of heat in your mouth but also about the texture.
